½ cup unsweetened, shredded coconut flakes
½ cup raw, unsalted cashews or macadamia nuts
1/3 cup oats (gluten free if your diet requires it)
10 medjool dates, pitted (buy dates with the pit intact and remove the pit yourself – these tend to be “juicier”)
2 tbsp unsalted, unsweetened peanut butter (Trader Joe’s has a great variety!)
2 scoops of unflavored collagen peptides (I use Vital Proteins)
1 tsp vanilla extract
1 tsp unsalted ghee (Fourth and Heart is a great brand)
a pinch of sea salt
¼ tsp ground cinnamon
1/8 tsp baking soda

In a food processor (this recipe will not work in a blender), pulse together the coconut, nuts, and oats until you reach a crumb like consistency. Next, add the remaining ingredients and process until a dough ball starts to form in the food processor and the dough easily sticks together when pinched. Make golf ball sized balls (depending on the size you make, you’ll get 10-12 balls), and place in an even layer on a baking sheet or glass container. Transfer to the refrigerator and let sit for 30 minutes to an hour before consuming. Dough balls will keep for a week to 10 days in the fridge!
