25 Apr Breakfast: TMAC Scramble

Prep & Cook Time: 10 min
Ingredients: (per single serving)
  • Portobello Mushrooms (1/2 cup chopped)
  • Onion (1/4 cup chopped)
  • Spinach (1 handful)
  • 2-3 eggs (you can add 2 whole eggs + 1 egg white)
  • Avocado (soft & ripe)

1. Cut up veggies of choice (onions, mushrooms, peppers, broccoli, etc)
2. Heat a touch of Olive Oil or Coconut Oil in pan over medium heat
3. Add veggies and sauté for a few minutes until tender
4. Add handful of spinach chopped roughly (it will shrink!)
5. Crack the eggs into pan
6. Scramble eggs with veggies for 4-5 minutes until cooked
7. Plate and top with 1/4-1/3 of sliced avocado
